    Perceptual Speed
    Mental Speed
    Physical Speed

Perceptual Speed -defined as the speed at which the senses monitor the stimulus that it receives, determines the meaning of the stimuli, and swiftly converys the information to the brain.

Mental Speed - defined as the speed at which the mind selects appropriate movements to effectively deal with the percieved stimulus.

Physical Speed - defined as the promptness of physical movement and the fluency in response to the percieved stimulus.

All these answers I found in an article by our very own John Bishop in Inside Kung Fu Presents Masters & Styles from July 1994.

There are a couple of good threads on this subject here and here. I'm sure there is a lot more than can be asked, explained, and explored on the subject here as well.
